Ingredients

Serves 4

  • 1 green, 1/2 purple, 1 red, 1/2 blue, 1/2 orange
  • 3 cups chopped rotisserie or grilled chicken breast
  • 1/2 cup chopped green apple
  • 1/2 cup seedless red grapes halved
  • 1/3 cup sliced raw almonds or walnuts
  • 2 green onions sliced
  • 2 tbsp fresh chopped tarragon
  • 1/4 cup honey mustard dressing (recipe in lunch section of site)
  • 8 cups shredded romaine lettuce

Directions

  1. Combine chicken, apple, grapes, almonds, green onions, tarragon, & honey mustard in a large bowl, Mix well.  Refrigerate covered for 2 hours.
  2. Serve Salad over 2 cups Romaine Lettuce
