Ingredients
Serves 4
- 1 green, 1/2 purple, 1 red, 1/2 blue, 1/2 orange
- 3 cups chopped rotisserie or grilled chicken breast
- 1/2 cup chopped green apple
- 1/2 cup seedless red grapes halved
- 1/3 cup sliced raw almonds or walnuts
- 2 green onions sliced
- 2 tbsp fresh chopped tarragon
- 1/4 cup honey mustard dressing (recipe in lunch section of site)
- 8 cups shredded romaine lettuce
Directions
- Combine chicken, apple, grapes, almonds, green onions, tarragon, & honey mustard in a large bowl, Mix well. Refrigerate covered for 2 hours.
- Serve Salad over 2 cups Romaine Lettuce
